The original Rock Rose elements have been toned down to allow the more piny, earthy notes from the star “Winter” botanical of spruce tips to shine through. Pine dominates the senses, unfolding on the nose and mouth and conjuring images of frost tipped Christmas trees and briskly cold winter mornings. There’s a dusty, earthy hint to the nose, along with a dark green vegetal quality.
As the name suggests, this is a bracing gin that captures the sense of sweeping winds and pine-laden evergreens on an otherwise barren landscape. Spruce and juniper cover the tongue, while a deep wintry warmth heats up the throat. The gin has a strong herbal feel, with a hint of stinging nettles and a touch of lemony coriander.
