About
Four Pillars Sherry cask Gin
Sherry cask aging is fairly commonplace for whiskey, but this is gin and it brings a whole new dimension to the character.
Four Pillars built a solera system to process this. It's a series of barrels used for ageing Sherry. The aged gin is bottled from the oldest barrels, which are topped up from the row above and new gin added to the top of the chain. Some of the barrels came from Spain, some from a local fortified wine called Apera.
The process gives a distinctive pine, almond and dried fruit notes.
A dash of sherry is added at the final stages to enhance the depth of flavour and bring a touch of marmalade like sweetness.
Makes a great Tuxedo cocktail.
The Taste
A pine needle quality underpins some amazing complexity. The residual Sherry character has integrated beautifully with the deeper cassia and star anise flavours – think dried fruits and nuts on the palate
