To make the old Tom, they age their excellent Boatyard Double Gin in bourbon barrels, then sweeten it with Fermanagh honey.

This particular variant sets out to be a rich and buttery invocation of Lemon Meringue pie, offset by menthol & Juniper.

It has a burst of raspberries on the nose and on the immediate palate but then those wonderful juniper notes come bursting through. It's a proper gin.
